I'm not sure of how this particular dictionary works. Primate generally has two meanings: an animal such as an ape or a human, and a church leader, such as an archbishop. The only connection that I can see between Primate and specialized is that an archbishop, for example, has specialized in his career choice.

What does "specialized" denote over here?

I just searched for antigen, glycerol, glycogen and as you can see these words are also categorized as 'specialized' words. I'd say that by 'specialized' they mean that these words appear in specialist literature - that is, textbooks, academic articles and so forth. It's the equivalent of 'technical', a term which is used by the Longman Dictionary of Contemporary English - see antigen - Definition from Longman English Dictionary Online.
