Grammatically, "spread" is fine; "spreading" could work too.

spread before us is OK and refers to the location of the farms of fields: They are spread out before us, whereas spreading before us , which is also OK, refers to what the farms and fields are doing: They are spreading outward before us, which sounds very poetic and rather nice.
