Hi

What would this mean if I said: I had to do a few tasks and assignments.

would there be any difference between tasks and assignments?

Yes.
An assignment is a task or piece of work assigned to someone as part of a job or course of study.

A task is any other kind of job that has to be done, whether "I set myself the task of going through my wardrobe and throwing out all my old clothes.", or somebody else setting you a task e.g. your wife standing over you while you finally rake up all the leaves.

They are usually synonyms but:
A task is a well-defined responsibility that may be causing difficulties: I stayed at work late to finish the task at hand.

Assignment is generally something you are told to do by a person in authority.
The difference lies in underlined words.

Not really, unless you specify what kind of assignment and what kind of task you had to do.
I had to do a few written assignments and two practical tasks on the computer last month.
Does it make sense?
