Below two sentences are excerpted from the Longman dictionary:

1). a journey of almost a thousand miles
2). The company employs 30 thousand people.

Why doesn't the people use the plural form "peoples"?

The first sentence #1 is the original example from dictionary, it is not a complete sentence, so it starts with a small caps of "a".

For the second one, I misread the definition of people from Oxford dictionary.

Oxford dictionary:
people [people peoples peopled peopling] noun, verb
1). plural persons; men, women and children
...
...

I will read every definition from dictionary carefully in the future to avoid this situation.

After reading the post #2, I have a little question.

Sometimes, people can be used in a plural form to mean the people living in a particular area, country, or ethnic group

The peoples of South America mostly speak Portugese and Spanish.

I found the following definition from the Oxford dictionary:

Oxford dictionary:
3. countable all the persons who live in a particular place or belong to a particular country, race, etc
• the French people
• the native peoples of Siberia

Can I use "peoples" and "people" like below in contrast to the examples from the Oxford dictionary?
• the French peoples
• the native people of Siberia

The French people are one group of people so "peoples" would not be appropriate.
Native peoples of Siberia because there are more than one indigenous groups of people living there.
You could say "the native peoples of the Amazon," or "Native American peoples."
