- The lessons the school arranged were very enjoyable.
- The lessons that/which the school arranged were very enjoyable.
- The lessons that/which were arranged by the school were very enjoyable.

- The lessons that/which were arranged by the school were very enjoyable.
I think 'that/which were' can simply be omitted.

What the OP did in #1 is different from what I did in #3.

1. The lessons the school arranged were very enjoyable.
3. The lessons arranged by the school were very enjoyable.
