I always say, "There is a variety of fruit in there." Ther only time I use fruits is when it is paired with another word that is plural.

There is a variety of fruits and snacks in there.
That store has a good selection of fruit.
That store has a good selection of fruit and other produce.
That store has a good selection of fruits and vegetables.

That's just the way I use these words; I don't think that it is a rule.

I wouldn't use collection, it doesn't have the connotation of being available for sale.

What do you mean?
A variety of fruit is equal to one kind of fruit, that is, an apple or a pear or other variety and it does not express the number.
A variety of fruits means a group of kinds of fruits, that is, a group of apples, oranges, pear, pineapple, etc, and it does not mention the number.
That is my opinion. I'm eager to hear a better explanation.

Fruit is an unusual noun in English in that it has both a plural form, fruits and a collective form, fruit.

We say:

A healthy diet includes fruits and vegetables. plural
A truck overturned and spilled fruit all over the highway. collective
Have a piece of fruit instead of candy or a cookie. singular

BTW Angliholic, selection and variety would be interchangeable in this situation.
