Suppose Mrs. Robinson has a class, it finishes at 7:10 p.m. Mr. Kite has a class in the same room at 7:15. At 7:15, Mr. Kite notices he can't enter the room because Mrs. Robinson is still there. Can I say that Mrs. Robinson stood him up? If not, how could I put it?

The idiom you're looking for is ​held him up. Mrs. Robinson would have stood Mr. Kite up if she failed to turn up for a date.
