are they synonyms?

should i always use "symbol" in every situation/context?

You need more context than that; however, the differences are:

A token is a thing that you give or an action that you take which expresses your feelings or intentions, although it might have little practical effect:

Please accept this as a token of my appreciation.
He made a token effort to take part.



A symbol is something that is used to represent a quality or idea:

The Rolls Royce is a symbol of affluence.
A heart shape is the symbol for love.

the difference between the 2 words is very subtle to me.
is it possible to use symbol instead of token?

You can, but it will not necessarily have the same effect. Perhaps you can give some sentences in which you would use either or both so we can see what you want to do.
