What do we call those two words with the same starting sounds such as Peter Piper, Mr. Mcdonalds, Shelly Shoe...:-D

I'm not a teacher, but here's how I understand it. Alliteration is the repetition (usually) of initial consonants, as in "Peter Piper picked a peck of pickled peppers". Repetition of initial vowel sounds is called assonance.
