'does' marks the grammatically singular but notionally plural 'everyone' so we don't need a double marker. 'have' is the one you want.

DOES EVERYONE HAVE THEIR BOOK?

'his', to me, just sounds weird.

The first one is the one you want, TVRAVIKANTH.

I read in a book that
DOES EVERYONE HAVE THEIR BOOK? is incorrect
It should be DOES EVERYONE HAVE HIS(or HER) BOOK?

I also want to know the answer for my other question

HE HAS WHITE HAIR
or
HE HAVE WHITE HAIR

That is an old prescription, T, that never adequately described how English works. It even sounds silly.

Why would, how could everyone have his book? 'everyone' is grammatically singular but it's notionally plural. 'their' just makes more sense overall.

HE HAS WHITE HAIR

HE HAVE WHITE HAIR

I answered that one. The first one is the one you want to use.

Does everyone have his book is correct. Type the exact phrase "everyone have his" in quotes in google and add the word grammer to it. A result from a toefl book shows up in the search and that is probably where you got it from?

It is also included in the opening section of Manhattan Gmat Sentence Correction book.

Explanation: everyone is singular so we should use has, but the mood of the sentence is subjunctive. That is the teacher (or the person saying the sentence), isn't quite sure if everyone does actually HAS a book. So we use HAVE.

How to Prepare for the TOEFL - Google Book Search

E.g.

If I were superman, I could fly. is correct
Normally were is plural verb, but "If I was superman, I could fly" is incorrect. Again subjuctive mood changes the verb.
