I am wondering if my sentences are grammatically correct.

Walking the street lined with cafes and pubs, John remembered that his father's habit every morning was to sit with his newspaper and drink coffee in his favourite cafe, even when he was having a bad cold. This was the daily ritual he clung to until his death.

The present perfect continuous doesn't work with a medical condition. Use the past simple.

I will repeat my sentence after GoesStation's correction as an exercise.

Walking the street lined with cafes and pubs, John remembered that his father's habit every morning was to sit with his newspaper and drink coffee in his favourite cafe, even when he had a bad cold.

That's better. The final clause is a little ambiguous though; your reader might attach it to John rather than the father. Replacing the comma with an em-dash would (mostly) resolve this. (A really stubborn reader might still think it was John who had the bad cold.)
