the question is trivial as it seems...

which is correct? does it depend on whether it is an adjective or a noun ?

Yes it would depend on whether it was an adjective or noun.

A simple statement of nationality, we are all Italians. (noun).

Or, If you are referring to the characteristics of Italians then we are all Italian (adjective).
