Which sentences is correct?

  1. We decided to go for a stroll barefoot on the beach.
  2. We decided to go for a saunter barefoot on the beach.
  3. We decided to take a saunter barefoot on the beach.

They're all fine. Stroll is more natural than saunter. The most natural word is walk.

I think go for a stroll and take a walk are equally natural there.

It's used as a verb fairly commonly in BrE but not as a noun, as it would be in "take a saunter".

My friend and I sauntered along the seafront at Bognor on Christmas Day.
He was sauntering round the museum for hours.

You're right, they both work fine there. I say "most natural" because where I've lived, people mainly take walks on the beach and strolls on streets and paths.
