We learned about the way in which the oceans are affected by the moon.

They are both okay. I much prefer the shorter one.

It's okay. There's no reason to add a superfluous word to a correct, shorter sentence.

Can you convert the second clause into the active voice with "the moon" as the subject?

You could shorten it further to "We learned how the oceans are affected by the moon".

I just tried to use different ways of expressing one idea.

I think I can.
We learned about the way which the moon affects the oceans in.
