'Centres' is fine - changing it to 'centre' would change the meaning of the sentence (and you should add 'a' or 'the' before 'city' then). I would change 'cars noise' to 'car noise'.

Cars create car noise - sounds a bit silly doesn't it?

Too many cars in the city centres will cause air pollution, noise pollution and traffic congestion.

Why change 'can' to 'will'?

It is almost a certainty. Well, guess I shouldn't change the sense of the sentence.

Is cars here right?
or
Should it be car?

If you insist on keeping it, then the singular "car." However, I completely agree with the prior poster that cars make "car noise" so you can drop that word.

... air and noise pollution and congestion
