The area administered by a bishop has one cathedral.

They are all possible. Sentence two has a different meaning from one and three.

You could remove which from sentence one without changing its meaning.

I think sentence 2 would be consistent with 1 and 3 if a comma is added after "cathedral".

Sentence two in the first post could imply that other areas with different bishops might have more than one cathedral.

With or without the comma, sentence 2 means the bishop administers the cathedral. The others mean he administers the region.
