I would like to ask which one of these expressions is correct. Or are both possible when they are out of context?

I don´t mind to cook/cooking, as long as I don´t have to do the shopping.

I think the correct expression is:

I won't mind cooking, as long as I don't have to do shopping!

But I think this is only a grammatical point and there will be no clear meaning as long as we got a change in its structure!

I'm not a teacher, but I agree with David L's post:

I don´t mind cooking as long as I don´t have to do the shopping.

Notice the phrase "do the shopping", not "do shopping". The absence of the article would make the phrase sound unusual to many, if not most, native speakers

The speaker is apparently talking about some situation in the near future where he is is required to do the cooking. When this happens, he won't be unhappy or object, as long as he doesn't also have to do the shopping.

I hope you won't mind going to the store for me. You see, I won't mind doing the cooking if I don't have to do the shopping.
