while I was reading, you were cooking.

I found that someone may rewrite the clause just like:
while I read, you cooked.

Is it all right if both actions are parallel?

By the way, I do not understand this sentence.
"I happen to think he's right."
Could you give me a scenario about it.?
Thanks so much

***** NOT A TEACHER *****

Good morning, Student X.

MARTHA: Tom is so crazy!

MONA: Why do you say that?

MARTHA: Because he said that Betty is a beautiful girl. Everyone knows that she isn't.

MONA: Oh, yeah? Well, I happen to think he's right!

MARTHA: You're joking.

MONA: No, I'm not. In my opinion, Betty IS beautiful -- just as Tom said.

MARTHA: I can't believe that you're saying that.

MONA: Well, believe it!
