I would like to ask if it is alright to use "will" instead of "wish".

will - definition of will by the Free Online Dictionary, Thesaurus and Encyclopedia. - Here is where it is written that "will" may have a meaning like "wish".

Is it grammatical to say something like "I will I were..." instead of "I wish I were..."?

"I willed myself to become the champion hot dog eater" is a valid use.

This is the relevant definition that you are quoting:

To wish; desire: Do what you will. Sit here if you will.

That is a rare usage of 'will' among very many more commonly used meanings of the word. You cannot use it to mean 'wish' outside of these specialised cases.

There is a somewhat outdated way to use a modal as a wish: Would that I were....
