a. In this workshop, work is done sitting on tall stools.

b. In our office, technical drawings are done standing behind drafting tables.

I would add 'by' after 'done'.

Neither of these sounds very natural to me. the subject of is/are done is not the same as the implied subject of ​sitting.

Yes. That was the problem. They sounded fine to me, but when I thought about them I felt that there seemed to be a logical flaw. 'Work' isn't sitting down when it is being done! But I suppose in casual conversation the flaw may be overlooked...

Not sure about anything I am saying here. These are just thoughts I had.
