work vs. working?

Why do we say "work" experience and "working" visa?
When should I add "ing"?

'Working' would suggest it hadn't been finished, like a 'working party', which is a committee that is still working.;-)

When a present participle is used, it shows that the thing is in action.

A running man = A man is running :)
