Is it Beginner's level or Beginner level ?

Hi teachers,

I am writing an email to my best friend, Jan, who lives in Australia.
These are some of the things that I am going to tell her in the email:
...
There will be no school for a few days on 18th this month due to federal holiday.
I am thinking of doing some self-paced learning at beginner's level, such as Japanese, painting, horse riding.
...

But I am not sure if I should say Beginner's level or Beginner level.
Compare: Intermediate level, Advanced level
Are there any other grammatical mistakes in my email, teachers?

Hi,
In my opinion, Beginner's level is fine.
 
Beginner level, or beginners' level, are better than beginner's level.

Introductory level is also great.

However, you can't have [clause] due to [substantive], it has to be [substantive] due to [substantive].
