Hello.

Is it possible to say

I had my fingers sandwiched between the train doors

instead of

I had my fingers caught between the train doors.

I had my fingers sandwiched between the train doors I wouldn't say that.
"caught" strongly suggests that you can't remove your fingers from between the doors. "sandwiched" doesn't suggest that to me.

The usual expression is to have your fingers trapped between doors.

Do you mean that sandwiched conveys the meaning more clearly so that sandwiched can be used in this situation?
 
No, not more clearly. It is understandable, but it uses imaginative language.
 
It is more interesting to use sandwiched inthe sentence, which is really vivid.
 
I think it depends on exactly what you are trying to say. Are you speaking about the position of your fingers in regard to the door (in which case 'sandwiched' is fine), or about your fingers being stuck (in which case 'caught' would better describe the situation)?

In fact, one of my students composed the sentence and have hesitated how to correct it.

Neither sandwiched nor caught reflects the pain experienced when your fingers are trapped.
