There are probably dozens of ways to say this.
When the sun shines on the ocean, water evaporates.
Water evaporates when it is warmed by the sun.
The sun causes water to evaporate.
The sun causes the water in our oceans to evaporate.
The heat of the sun makes ocean water evaporate.
The heat of the sun evaporates the water in the oceans.

The closest correct version to your original I could come up with was:

The sun shining on the sea makes water evaporate.

However, water evaporation is not caused by the sun shining on the sea. Evaporation has many causes.
