1. What does this "stock" refer to? "supply" or "a family(kind) of plants"?
2. The blank's answer is "in fact", can't "in short" work? "In short" also seems to work as it summarizes the idea of the previous parts.

"supply" is the best choice here. Tire stores have a stock of tires, food stores have a stock of food, and you may have a stock of good brandy set aside. "in fact" is used here because the rest of the sentence is pointing out some truths that were not mentioned previously.
