[Grammar] which tense

Are both past simple and past continuous tense appropriate in this sentence? Or only one of them? if so which? and could you explain why?

" I remember how we ........ (to enjoy) ourselves last summer. "

I would use "enjoyed" or "used to enjoy", not "were enjoying".
The time to use "were enjoying" in this context is something like, "I remember how we were enjoying ourselves last summer until my father suddenly died."

I agree that "were enjoying" is wrong in that context, I wouldn't use "used to" with "last summer", though. I would use "enjoyed".
 
I would use "enjoyed". It is a completed past action.
 
If that is the complete sentence, I'd use the past simple too. You would need something more to justify using the past continuous.
