"Anything" vs "something"

What's the difference between anything and something in negative sentences?

1- I did not say something/anything that could hurt his feelings.

2- I won't ever work on something/anything that could hamper the poor's interest.

3- I don't want something/anything like this happen to him.

1. Either is possible.
2. Either is possible. (I don't understand the last part.)
3. Either is possible.

The difference is subtle, and I would need some context to decide between them.

(I would probably say "confused" instead of "puzzled".)

Since you formed those sentences yourself, I think the best way to approach this question is if you first tell us which word you had foremost in your mind as you were composing them.
