And the pub is famous for RAF airmen’s graffiti covering the ceiling and the walls.
In World War Two, Cambridge avoided/was free from bombing from German air crafts.
So Royal Air Force was based in Cambridge. So many airmen visited the pub and drew/made graffiti.

Are the underlined correct?

Perhaps:

The pub is famous for RAF airmen's graffiti covering the walls and ceiling.

And:

In World War Two, Cambridge was free from bombing by German aircraft.

And:

The RAF was based in Cambridge. Many airmen visited the pub and left their graffiti there on the walls and ceiling.

Why isn't this "a German aircraft" or "German aircrafts"?.

In World War Two, Cambridge was free from bombing by German aircraft.

Because the word aircraft is uncountable.

It is also occasionally used as a countable noun too.

If we wanted to pluralize it we would say German airplanes. (Specifically, German bombers.)
