Is "notify" correctly used here if I want to say parents can always remind/ tell their kids anything important through phone.

Yes, but I think the word is a bit formal for everyday conversation. You could use "inform".

Parents can [STRIKE]notify[/STRIKE] let their kids know [STRIKE]of[/STRIKE] anything important [STRIKE]things[/STRIKE] [STRIKE]via[/STRIKE] by phone.

Is "notify" [STRIKE]correctly[/STRIKE] used correctly here if I want to say parents can always remind/tell their kids anything important [STRIKE]through[/STRIKE] by phone?

See above. You've made it informal by using "kids". Both "inform" and "notify" are too formal for that context. Use "tell" or "let know". And we don't say "via phone" or "through phone". It's "by phone".
