I know "Whose turn is it?" can be answered with "Mine", but would any of "My" or "Me" be natural as well?

No. A question that starts with "Whose" needs a possessive pronoun in a single-word response. If you add words and say "It's my turn" then "my" would be correct because it's a possessive determiner. For that, you need to repeat the noun, not replace it.

I can imagine someone saying "Me" but "My" is very unlikely.

They would have to say "it's my turn." That would be natural.
