    Which is correct? why?

    They are both correct, it depends what you want to say. How many books do you want the person to take?

    Absolutely correct. ‘Any’ as an adjective can describe;one or some or even every and all, as:
    Read any books you find on the subject.
    We were unable to find any books matching your criteria.
