There is a sentence: The only abnormality that showed up at once was the egg's behavior on being heated.
Here can I use when or once being heated? Or if I use when, should the word being here be omitted: when heated, or once heated?

Yes - omit the 'being' when you use 'heated', unless you use a subordinating conjunction that emphasizes the duration of the process, So 'the egg's behavior when heated' but 'the egg's behavior while being heated' . This 'while being' sounds a little odd - I think most people would use something like 'the egg's behavior in the course of heating/while it is being heated' - but it's acceptable (to my ear).
