    Default person or persons

What will be a better way to express the following:

The Readers' Digest magazine used to have a regular feature, “My Most Unforgettable Character”, where different writers used to write about the most unforgettable person (or persons) they knew. Each issue would publish one article about one individual.

In this case, wouldn't it be better to use PEOPLE instead of person/ persons?
write about the most unforgettable PEOPLE.

    Not a teacher.

    "People" are forgettable.

    "Persons" we remember.

It sounds good to me as it is with a few changes. "Issues" do not publish. I would suggest, "In each issue would be an article about one person who was unforgettable to the writer."

In the first sentence, should it be "person" or "persons"?
