B. An abundance of fruits and vegetables grow in Kenya's temperate climate.
In A, fresh fruit is in the plural. So is fruits in B.
In what way does one choose which one, fruit or fruits, please?

Am I right in assuming that in A, the ‘fresh fruit’ is generic, and in B, the ‘fruits’ is specific?
In accordance, in A, the ‘vegetables’ is generic, and in B, the ‘vegetables’ is specific?

Yes, but I don't think I would use abundance here; if you look at these searches, it looks more of a technical than a natural everyday collocation:
I think of it more in terms of quantity than variety, though others may see it differently.
