Default Word substitution and substitute. How to use them correctly.

For this dish on the menu, the chicken can be substituted with other kind of meat such as beef and fish. So i asked the customer:
    1) What would like to substitute this dish with/for? or what meat would like to substitute this meat with/for?
    2) Which one of this dish you would like to substitute or which one of this dish you would like to make substitution?

'Would you like that with chicken, beef or fish?'
