Can someone please tell me which of the above sentences sound natural? Can I replace walk with stroll?

Do you mean "path" when you say "way"? If so, "I love walking on the path behind that garden" is OK, as long as the path is located behind and not in the garden. "Strolling" is fine as an alternative to "walking".

Not usually, although "path" is a shortened form of "pathway" I believe.
