What is the context?

My best guess is it means that someone or something will never change to a pop style and become focused on being widely popular. So a rapper might say they will stay hardcore and never go pop, or a rock band might say they will not make their music softer and never go pop.

The context:

OK, I see now. It means the heart does not break - "pop!" might be the sound it would make if it burst. To "go pop" can mean to burst like a balloon.
