"She wants to study English, so she can read Shakespeare's plays in the original." What part of speech is the "original" here : adjective or noun ?

Well, in my opinion, "original" in this part is an adjective. In English, there is a structure " The + Adj" to refer the collective noun.
However, I just see "in origin" and I wonder why don't you revise this sentence?

1. Your sentence is fine.
2. "(O)riginal" is a noun there.
