Hello!
In this case, can we use the present perfect and past simple interchangeably?
-I have read/ read this book six times and every time I loved it!

Yes.
If you use the present perfect with 'read', you can also use it with 'love'.
If you use the past tense of 'read', then there is a slight suggestion to me that the last occasion was quite some time ago. I would expect the context/co-text to at least imply this - for example, if the speaker were talking, some time after graduating, about his time at university.
