Default pronunciation of Jones' / boss' / Charles'

I'm sorry if a similar thread has been discussed.
I've recently seen a video where a few native speakers mentioned the movie 'Bridget Jones' Diary' pronouncing Jones' without the /iz/ syllable at the end of the word.

I've always thought we should pronounce the /iz/ even if we don't add the 's .
my boss' wife = read: bossiz
    Charles' son = read: Charlsiz

Do I need to update my grammar knowledge?
I'd be grateful for comments on this.
