Can we use the present perfect and the past simple interchangeably here, please?

"The meeting was supposed to be on Tuesday 11th October but we postponed /we've postponed it until Wednesday 19th".

i think the present perfect is more appropriate than the past simple.

Because the past simple indicates an action started and finished at a certain time in the past.
In your example the action isn't finished.

The act of postponement is in the past, so the past simple is appropriate.
The time period in which the act of postponement took place is not yet over, so the present perfect is also appropriate.
