I'm going to forgive her. Not unless she expresses her deepest [apology, apologies].

In the sentence above, should "apology" be plural?

Yes, but "...not unless she apologizes" would be more natural.

Even more natural would be to begin with, "I'm not going to forgive her".

... followed by 'however much she apologizes'.

I'm reminded of Rex Harrison:

I will never take her back -
If she were crawling on her knees
Let her promise to atone
Let her shiver, let her moan -
I will slam the door and let the hell-cat freeze.

(As I remember he slipped between the indicative and the conditional more-or-less randomly!)
