I want to write the phrase "all previous week 7". What is the correct plural form of "week 7"? "week 7s", "weeks 7"? Or is it wrong to use a plural form of this noun.

First, it would help if you posted the entire sentence in which you want to use the term. But as a guess for what you want to say, it could be "all weeks prior to week 7". There is no plural form for the term unless,for example, you want to couple week 7 with one or more weeks as in "weeks 7 and 8".

My guess is that you want to say something like, "In week 7 in previous years, ..."

If each year is broken down into individual weeks and you wish to refer to each "Week Seven" which has occurred, the I don't see why you shouldn't say something like:

"If we look at all the Week Sevens since the company started operating..."

However, as 5jj said, without context, it's hard to know whether or not attempting to pluralise "week 7" is appropriate.
