It makes perfect sense, but I don't know about the commas at the beginning – be safe and stick with colons.
Are these two sentences correct?
We make three flavors of ice cream, chocolate, vanilla, and strawberry.
Our ice cream comes in three flavors, chocolate, vanilla, and strawberry.

I could be safe, but want I really want is to know the rule. I would think that someone here should know it...anybody?
Use a colon.
Or, if you prefer, do NOT use a comma.
I'm not a teacher, but I write for a living. Please don't ask me about 2nd conditionals, but I'm a safe bet for what reads well in (American) English.
