I'm just wondering if "this" is also possible if the speaker is the one holding the popcorn. In that case the popcorn is closer to her. Hence, "this"?

Were "this" and "that" your only two choices? Or was it not a multiple choice question? If you were free to put in anything which would fit, you could have used:
that
this
my
your
his
her
their
our
the
