OR
"She hasn't written much during the last month."
OR
"She hasn't written much during last month."
I guess they would all be acceptable?

Can you please explain why we can leave out the definite article in the first two sentences but in the last one?

Your thread title should include all or part of the word/phrase being discussed.
If you just want to know the meaning of a word, try OneLook Dictionary Search first.
The first two are acceptable but they do not mean the same thing.
Remember - correct capitalisation, punctuation and spacing make posts much easier to read.
