"In the days of my youth" = "During the time that I was young" (period of time)
"On the days I could not see you" = "On specific days" (shorter time period).
When we talk about days ie Monday, Tuesday, etc, we use "on":
I am going home on Tuesday.
On the days I have to go to school, I wake up feeling anxious.
When we talk about days and we mean "periods of time", we use "in":
In Shakespeare's day, men played women on stage.
In the days of my youth, I was an enthusiastic singer.
In the days of my youth, I was an enthusiastic public singer. On the days I was due to sing on stage, I was always very anxious.
Remember - correct capitalisation, punctuation and spacing make posts much easier to read.
