I have a qustion: How can I (make) write a conversation? What I mean is: Are there PARTS in the conversation e.g: starting, ending etc

Well, there is always an opener. Example:
A: How are you doing?
B: Fine. How are you doing?
A: OK. Have you heard the news?
B: What news?

To write a converstaion you should start with polite expressions like Hey, Hello, or Hi? and start your converstaion:
This is an example: (converstion between secretary and caller)
A: Hello!
B: Hello 4158668
A can I talk to mister Smith?
B: who's talking please?
A: my name is Carol, Carol Ritchared.
B: hold on please, I'll see if he's in...I'm sorry he's out at the moment can I take a message?
A: no thanks, I'll him call up this evening. Good bye
B: Good bye.

As the other users said, you should be opening and ending a conversation with the appropriate words.
Openings: Hello, Hi, Good Morning, etc.
Endings: Bye, Goodbye, See you later, Talk to you soon, etc.
Now as for the actual writing of the conversation, if you are concerned only with the speech, then what the others have posted is perfect.
A: Hello
B: Hello! How are you?
etc.
If you also need to mention the physical actions that are involved in the conversation, then you may want to switch to a different format. This could be the same as the previous example, but with actions written in parenthesis, or in a format used in literature such as fiction books.
"Hello!" A called as she saw B.
"Hello! How are you?" B replied with a wave.
The second example could give more information about the circumstances of the conversation, physical actions which take place during the conversation, and the tone of the conversation.
