First take a pan. Fill it with water. Add a little salt to the water. Bring the water to the boil on the cooker. Carefully place the egg/eggs into the boiling water. Reduce the temperature until the water is simmering.
For hard-boiled eggs, leave the eggs in the hot water for 6 - 8 minutes.
For a soft yolk and cooked white, leave the eggs in the water for 4 minutes.
Why add salt? I always imagined egg shells as impermeable, being cooked by the heat alone. Does enough of he salt really get through the shell to flavor the egg?
Adding salt is intended to reduce the chance of the shell cracking. If it does still crack, then the white coagulates more quickly. It is the reason why either salt or vinegar is added to the water in which an egg is poached.
Another way to avoid the shell cracking is to pierce the shallow end [where there is an airbubble between the shell and the skin lining the shell]. This releases the air and prevents the egg bursting.
