Rachel: Well, apparently he scares easy.

"Easy" here should be substituted by "easily", am I right?

Yes. Recast to "he is easily scared" vs "he is easy scared" and it is clear that you are correct in your assumption.

But sometimes 'easy' can be a bare adverb - 'Take it easy', for example.
